| Right up to Christmas Eve, and the third time was the charm. This is as close as I can get to the pink box of cookies Mom is so fond of. The inspiration recipe is from - https://southinyourmouth.blogspot.com/2007/05/danish-wedding-cookies.html wrote:

Ingredients 1 cup + 2 tbsp of AP flour 1/2 cup butter, softened 1/2 cup pecans, finely chopped 1/2 cup powdered sugar, sifted and divided 1/2 tsp vanilla extract 1/8 tsp coconut flavoring 1/3 cup mini chocolate chips Revamped Ingredients1 cup all purpose flour 1 cup oatmeal, ran through a food processor/Magic Bullet/Ninja--doesn't have to be a fine flour consistency 1/2 cup walnuts*, finely chopped 1/2 cup powdered sugar, + extra for coating 1/3 cup mini chocolate chips 1 cup butter, room temperature/softened 1/2 tsp vanilla extract +splash more 1/4 tsp each of almond and coconut extracts + splashes more Directions
- Preheat oven to 400F. Line jelly roll pan or cookie sheet with parchment paper.
- Combine flour, oatmeal, nuts, 1/2 cup powdered sugar, and chocolate chips in a bowl.
- Add remaining ingredients, using a fork to evenly mix and mash in butter. The batter will be crumbly. (splashes of extract: a little more of each seemed to be needed after quantities listed were measured out, so a splash of each was added.)
- Set the dough in the refrigerator to chill for ease of handling.
- Shape dough into 1-inch balls and press a little to turn into cookies. Place on parchment lined cookie sheets.
- Bake 10 t0 12 minutes.
- Remove from oven, cool slightly, and then roll cookies in powdered sugar before cooling completely on wire rack. (Mine have turned out fine if completely cooled and then powder sugaring them.
*Pecans can be used. Walnuts are what I had and used. There were no complaints. | |
