Don't fret too much.

I'd toss in the two ingredients used to make marshmallow creme when the fudge recipe calls for marshmallow creme. It doesn't take a lot to melt marshmallows. Even if they don't melt all the way, hopefully the worse would be streaks of marshmallow in the fudge.

It's not a true cream in a sense. It's not even refrigerated, but a whipped, spreadable form of marshmallows.

I've never tried this, but someone online said, "... a 1994 Southern Lliving Annual Cookbook states that a 1 16 ounce package of marshamallows, melted, plue 3 1/2 tablespoons ligth corn syrup equals a 7 ounce jar of the creme. We got that Dairy Whip years ago and they took it off our market. Mad Mad

Yay, I already had this one typed out. bom 

Here's the fudge that reminds us of our friend. Like you, FF, he and his wife made a few varieties of during the holidays. We tried this one. It was too yummy to keep in the house. pig 

2 cups Sugar
3/4 cup Butter
1/2 cup canned Pumpkin
1 cup Brown Sugar (I've seen some call for a little less, 3/4 cup)
2/3 cup evaporated milk
1-1/2 tsp pumpkin pie spice or cinnamon
1 12 oz package of white chocolate chips
1 7 oz jar Marshmallow Cream
1-1/2 tsp vanilla
1 cup of Walnuts or Pecans

Combine first 6 ingredients, dissolve and boil. Bring to soft ball stage (234-245F). Remove from heat and add other ingredients. Pour into 9X13X2 pan and cool.
