| Glad you're feeling better. Hubs had something similar yesterday. He came home early and slept for hours. Scared the mess out of me. I'd just finished lunch and was in the living room when the doorknob jiggled. Hubs said he heard the laptop slam shut. It's a Macbook made of metal. I was going to whack whomever was breaking in with it. I wasn't too rough, but he did get a little chewing out for not warning me to expect him. Scaring me is a dangerous thing for me and the one doing the scaring. I tend to go for flight after the fight, or maim, mode. | |

| Yep. You hate to pour money down the drain, but even with research there's no guarantee. Some are so far off you wonder how they get away with advertising it as a substitute, because substitute gives the impression it'll resemble the real thing. Alternative is more like it. Reviews aren't too helpful, because one will love the taste while another likens a product to battery acid. According to the tracking information, my order should arrive today. Soon we shall see if it's back to the drawing board. At this point, I'd be okay with tolerable. | |

| The Dukan diet called for this sweetener and I thought I would do the right thing and try it. OMG down the sink, that stuff will kill a horse. | |

| I have no problem with that combo. Never fear. I have a sweetener on the way: Swerve. I've scoured the internet for information. http://www.naturalnews.com/039647_swerve_sweetener_ingredients.html#ixzz31y7j8g6f Although many rave about it online, moderate use is the plan. It appears to be a better option than other alternatives. Who knows, although Swerve claims to be non-allergenic it might not agree with the system. Or one taste will have me pawning it off on someone else. As much as I'd rather stick with dates, honey, and some regular sugar--and won't bake with the toxic waste that contains aspartame and such--higher carbs/glycemic loads pack a punch. Since cutting back, the reaction is more noticeable when I splurge. Two slices of pizza now have me in no time. Inflammation is still an issue, but the joints aren't as swollen--along with other signs of improvement since the carb cutdown. | |

| You could fiddle with the sugar a bit and use some natural sweetener if you wanted and the bicarb and baking powder can be left out, just use a smaller tin to get the height.
It is a super scrummie cake if you are like me and like the choc/orange combo | |

| It does sound tasty. Yep, castor is confectioner sugar for us. That's what increases the carbs a good bit. Still, this a worthy splurge food. And probably has less than an iced cake. | |

| Ingredients:
2 small or 1 large thin-skinned orange, approx. 375 total weight.
6 eggs
1 heaped teaspoon baking powder
1/2 teaspoon bicarbonate of soda
200g ground almonds
250g castor sugar (confectioner for you I think)
50g cocoa
orange peel for decoration if you wish
Put the whole orange in a pan with some cold water, bring to the boil and cook for 2 hours or until soft. Drain and when cool, cut the orange in half and remove any big pips. Then pulp everything, pith, peel and all in a food processor.
Once the fruit is cold or near cold, (though actually I most often cook the orange the day before) preheat the oven to gas mark 4/180'C. Butter and line a 20cm springform tin.
Add the eggs, baking powder, bicarb of soda, almonds, sugar and cocoa to the orange in the food processor. Run the motor until you have a cohesive cake mixture, but still slightly knobbly with the flecks of pureed orange. Or you could chop the fruit finely by hand and then cream the butter and sugar with a wooden spoon and add the eggs one by one, alternating with spoons of mixed ground almonds and cocoa, then the oranges, though I have to say I have never tried this.
Pour and scrape into the cake tin and bake for an hour, by which time a cake tester should come out pretty well clean. Check after 45 minutes because you may have to cover with foil to prevent the cake burning before it is cooked through, or indeed it may need a little less than an hour, depending on your oven.
Leave the cake to cool in the tin on a cooling rack. When the cake is cold, you can take it out of the tin. Decorate with strips of orange peel or coarsely grated zest if you so wish.
A very yummie cake and only a small slice per serve and super moist. Its not as hard to make as the process sounds mate. | |
