| 6 egg whites 1 and a 1/2 cups of firmly packed brown sugar 2 teaspoons white vinegar 1 tablespoon pure maize cornflour sifted
Preheat the oven to 200'C. Line a large baking tray with baking paper. Place the egg whites, brown sugar, vinegar into a large bwol of electric mixer and beat on high for 10 to 12 minutes until stiff peaks form.
Using a whisk, fold in the sifted cornflour
Spoon the mixture either as a large mound of four smaller ones. Place in the oven and immediately reduce the temp to 100'C.
Large mound, bake for 2 to 2.5 hrs or until the Pav is dry to touch.
4 small ones, bake for 1 to 1.5 hrs
Turn off the oven, set the door ajar and let the pav cool completely.
The brown sugar gives a delicious caramel flavour and the addition of the cornflour and vinegar results in a crispy exterior and marshmallow like interior | |
